This is the healthy variation of the chocolate chip cookies, still tastes great though. Very much a lunch cookie.

Chocolate Oat Chippers

1/2 cup butter or hard margarine
1 cup of brown sugar, packed
1 large egg
1 tsp of vanilla flavoring

1 cup of all purpose flour
1 cup of quick rolled oats
1/2 tsp of baking soda
1/4 tsp of salt
1 cup of semisweet chocolate chips
1/2 cup of chopped walnuts (optional)

Put the butter in a large bowl and add brown sugar, egg and vanilla flavoring. Beat on medium speed until smooth.

Add the rest of the ingredients and stir with a spoon until all the flour is mixed in. Grease the cookie sheets and drop by rounded tablespoonful, two inches apart. Bake at 350F for 10-12 minutes. Allow for three minutes of cooling befor eating.
