Traditional Irish Coddle "Like Granny Used to Make"

Personally I hate this but y'all asked for Down Home Irish Cooking - - so deal with it! This is a traditional workmans stew and best served straight from the pot

Ingredients
250g Sausage (fork sized pieces)
250g Pork Belly/ Rashers (Fork Size Pieces)
3 Onions (roughly chopped)
8 floury potatoes (Peeled and Quartered)
Freshly Ground Black Pepper
Water

Utensils
Knife, Board, Peeler, Large Pot, Wooden Spoon

Serves 4

Place pot on a medium heat and fry sausages gently until browned

Add Pork Belly and cook slowly for 10 minutes

Remember to stir and scrape the bottom regularly

Add 1 cup of water and deglaze the pot

Turn up the heat, add the onion and stir. Cook for 3 minutes

Add the potatoes and add water to just barely cover them

Bring to the boil and then simmer until the potatoes start breaking apart (approx 40 minutes)

Add water if it looks too dry

Presto there you have it
