1/4 # English Salt Cod --Rinsed and soaked 2 days in water
1/4# Yellow Potatoes (Yukon Golds) --Peeled and cut into eighths
1/2 Gal Whole Milk
2 Bay Leaves
2 Cloves
5 Clove Garlic
1/8 Cp Extra Virgin Olive Oil

1> Preheat oven to 425. Pull the salt Cod from the water and place into a large pot with the Potatoes, Bay Leaves and Cloves. Pour milk over it until it is barley submerged. Place on stove on low heat and cook for 30 mins, gently stirring occasionally until potates are tender and fish flakes apart. Strain out milk and pick out the cloves and bay leaf. allow to cool at room temp.

2> Smash the garlic flat onto cutting board with the side of your knife and finely mince the garlic, smash again and repeat. Scoop up garlic and place into large mixing bowl. Add Potato-Cod mixture into bowl and fold together with a spatula. Add Oil and salt to taste. Loosen with a Tbsp or two or milk. Fold together until fish is completely incorporated into mixture, Potatoes may still be a little lumpy, that is okay.

3> Spread mixture out into a small casserole dish and top with breadcrumbs. It should NOT reach past the top of the dish, if so , move to a larger dish. Place in oven with a cookie sheet underneath. Cook for 15 mins or until it soufflés up and breadcrumbs turn deep brown with a dark brown spot or two.

4> Serve Immediately with any sort of crackers. pickles and radishes are also good with this.
