This is something I made at a dinner party some days ago. It was quite popular and delicious.
sauce:
2 onions, diced
1 tbsp fresh ginger, minced fine
1tbsp garlic, minced fine
Oil
1/8 cp Water
3 tbsp Curry powder
1&1/2 cp Tomato sauce
1/2cp Tomato paste
Crust:
Garlic naan
cheese:
Pepperjack and cheddar
Possible Toppings:
Lamb diced and cooked
peeled, cooked shrimps
diced, cooked chicken breast
Chopped Scallions
chopped cauliflower tossed in salt and oil
Red onions
Paneer
Red Bell Peppers
Slivered Ginger
Zucchini
Arbol Chilis
Sauce:
Cook the onions, ginger and garlic together with a splash of oil on med-high heat until onions begin to turn clear. Add the curry powder and mix in until evenly coated. add water to loosen the spices stuck to the bottom of the pot. bring to a low simmer, stirring constantly and lower to med-low. Add Tomato sauce and paste and stir together. Cover and let simmer for 30 mins, stirring occasionally.
When ready, preheat your oven to 350
Smear the sauce on the Garlic Naan and sprinkle cheese fairly generously over that. top with whatever toppings you want and place in a frying pan or baking sheet, and toss it in the oven. Cook until cheese is melted and the toppings get slightly crisp edges.
