Lemongrass-Coconut Crab

With crab season coming up I thought I'd post this recipe. this is my own creation that I've actually made at work and sold with some success last year. This along with the skittles cocktail are my own contributions to the world of gourmands.

1 full pot of water, Salted
1 live Dunguness Crab

4 cups water
2 cans Coconut Milk
1 whole scallion, slightly bruised and roots cut off
1 clove garlic, crushed and peeled
1 piece of ginger, peeled and crushed (about same size as garlic clove)
2 stalks of lemongrass cut into quarters and fairly heavily smashed (But not obliterated)
1 thai chili or (2 jalapenos) split in half with top cut off

A: Bring salted water up to a boil, and then lower heat to a simmer. Drop crab in upside down for about 5 minutes. Remove crab from water and leave on a plate upside down to cool.

B: In another pot, Combine all remaining ingredients and leave on medium-low heat for about 1 hour. Gently stirring occasionally.

C: once cooled, gut the crab, removing he top shell and gills, and innards leaving the legs, claws, and base body intact.

D: place cleaned crab right side up in coconut mixture and make sure it is completely submerged. leave on medium-low and let cook for 20 minutes.

E: Remove crab serve immediately.
